We make our pastrami from scratch. We buy whole beef briskets, hand trim some of the fat, and hand cut each brisket into smaller pieces. Each piece is placed in our house-made brine of salt, sugar and other spices for at least 7 days. We apply our hand mixed pastrami rub and then smoke our pastrami over 8 hours. We steam Pastrome to perfection before its hand sliced (never machine) and ready to eat.
